Zucchini Noodles with Chicken + Pesto

Ingredients
  

  • 2 zucchini spiralized into noodles
  • 1 tbsp olive oil
  • 8 oz chicken breast grilled and sliced
  • 1/4 cup pesto I'm obsessed with Kirkland brand
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup parmesan cheese grated (optional)
  • Salt and pepper to taste

Method
 

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the spiralized zucchini noodles and sauté for 2-3 minutes until slightly tender.
  3. Add the sliced chicken and cherry tomatoes, stirring gently to combine.
  4. Drizzle the pesto over the mixture and toss everything together until evenly coated.
  5. Cook for another 2-3 minutes to heat through.
  6. Top with grated parmesan cheese if desired, and season with salt and pepper before serving.
