Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 red bell pepper chopped
  • 1 zucchini sliced
  • 1 cup broccoli florets
  • 2 cups cooked wild rice or brown rice

Method
 

  1. Preheat oven to 400°F. In a bowl, whisk together Dijon mustard, olive oil, garlic, lemon juice, thyme, rosemary, salt, and pepper.
  2. Place chicken in a baking dish and brush evenly with the mixture.
  3. Add chopped vegetables around the chicken, drizzle with a little olive oil, and season lightly.
  4. Bake for 25–30 minutes or until chicken reaches 165°F and vegetables are tender.
  5. Serve warm over cooked wild rice for a flavorful, anti-inflammatory meal.
