Garlic Butter Shrimp with Zucchini Noodles

Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 2 zucchini medium, spiralized
  • 2 tbsp butter ghee for dairy free
  • 3 cloves garlic minced
  • 1 tbsp lemon juice
  • ½ tsp red pepper flakes optional
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ¼ cup fresh parsley chopped
  • 2 tbsp grated Parmesan or dairy free alternative

Method
 

  1. In a large skillet over medium heat, melt butter and sauté garlic until fragrant, about 1 minute.
  2. Add shrimp, season with salt, pepper, and red pepper flakes, and cook for 2-3 minutes per side until pink and opaque.
  3. Remove shrimp from the skillet and set aside. In the same pan, add zucchini noodles and sauté for 2 minutes until just tender.
  4. Return shrimp to the pan, drizzle with lemon juice, and toss to combine. Remove from heat, garnish with parsley and Parmesan, and serve immediately.
